OKEECHOBEE — Rural Florida residents have endured higher levels of food insecurity due to the recent SNAP suspension in November 2025 and rising costs of food. Those impacted have little access to the food pantries in coastal cities. Our Community Table, a charitable Okeechobee County food provider to the less fortunate, continues to see these higher levels of hunger at their food stations. This is especially visible among the elderly, people with disabilities, and children.
To meet this growing demand, Our Community Table recently launched a mobile pantry initiative, distributing 3-lb rice bags, 3-lb pinto bean bags, and other donated essentials in Okeechobee County. The impact has been immediate, but the demand far exceeds current resources.
Beginning in Martin County and now reaching Okeechobee County, Our Community Table has served hot, freshly prepared meals every Saturday to the rural poor for the past 5 years. What began as a single meal site has grown into a regional effort supported by over 120 weekly volunteers, all serving without pay. OCT has no salaries, no payroll, and no administrative overhead — every donated dollar goes directly to feeding people.
Today, OCT is the largest Saturday meal distributor on the entire East Coast of Florida, delivering hot meals and pantry support to thousands of individuals and families who rely on them for survival.
Each Saturday, Our Community Table volunteers gather before sunrise to prepare meals using commercial-grade smokers and grills. The menus include homemade meatloaf, hotdogs with baked beans, pasta dishes, and other nourishing foods.
More than 900 hot meals are packaged and delivered weekly to five rural communities across Okeechobee County. Families, seniors, and children depend on this food as their primary meal of the week.
Many of these recipients are children; a staggering 84% of child food insecurity occurs in rural counties (National Center for Health Statistics). Children lacking consistent nutrition and regular meals become sick twice as often as other children. This need is urgent, and Our Community Table believes it has a moral responsibility to act.
